Strawberry Muffins

1/4 c. Canola oil
1/2 c. Milk
1 Egg
1/2 tsp. Salt
2 tsp.Baking Powder
1/2 c. White Sugar
1 3/4 c. Flour
1 c. Chopped Strawberries

Preheat oven to 375. Spray muffin cups or muffin pans with oil. In a small bowl, combine oil, milk and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in Strawberries. Stir to coat with flour mixture. Pour in milk mixture and stir together. Bake for 25 minutes or till tops bounce back from touch.
Note: Great with any berry! Or maybe even chocolate chips for the kids!

These are so good! I love making these because they are quick and easy. And sooo good!

Chicken With Veggies

1 envelope onion soup mix
1/2 tsp. garlic powder
1/4 c. oil
4 boneless chicken breast, thawed
4 medium potatoes, cut in chunks
4 medium carrots, cut in 1/2 inch slices

Combine soup mix, garlic powder and oil. Coat chicken and veggies. Arrange chicken and veggies in a ungreased 11x7 baking dish. Cover and bake at 425 for 15 minutes. Uncover and bake 15-20 minutes or till veggies are tender and chicken is done.
Note: I have made this several times and make it different every time to mix it up. I added some onions to the dish as well. I also sprinkled some lemon pepper on it for a zesty flavor. It's an easy recipe to add whatever you want. Try mini cobs of corn!

Loaded Baked Potato Casserole

1 package (1 lb. 14 oz.) frozen hash browns
10-12 oz shredded cheese
2 cans (10 oz each) cream of chicken soup
1 16oz tub sour cream
1 med. onion, chopped
3 oz. bacon bits
1-2 Tbl. fresh or dried chives
Pepper to taste
Saute onion until tender. Combine all ingredients in a large bowl and mix well. Bake in a 13x9 pan at 350 for one hour or till lightly brown on top.

I LOVE loaded baked potatoes so when I found this recipe and made it, it became a quick favorite!

Sausage Rice Casserole

1/2 lb. Italian Sausage
1/4 C. Chopped Onion
1/4 C. Chopped Red Pepper
1/2 C. Uncooked Instant Rice
1/4 tsp. Dried Basil
1 can (10 3/4 oz) Tomato Soup, undiluted
1/4 C. Water
1/4 C. Shredded Cheese
2 Tbl. Shredded Cheese

Preheat oven to 350. Cook sausage, onion and red pepper until meat is no longer pink; drain.
Stir in rice, basil, soup, water and cheese. Transfer to a ungreased 3-cup baking dish. Cover and cook for 25-30 minutes or till rice is tender. Uncover and cover with remaining cheese. Cook 5 minutes longer or till cheese is melted.

This dish is so good! It's easy and fast to make. Goes great with a salad.
